I promised to share some recipes with you.. so that is what I will do.
I've decided to pick out a few from my family cookbook - it's a big binder with random recipes penciled in, smeared with oil, and lightly floured. ;-) Everything in this notebook is something I have actually tried to make and ended up loving.
Let's say I get a recipe book, I keep the book, look through it, and select a few recipes to try. If the dish comes out well, I copy it into the notebook. Honestly, the notebook is not that full, but it's getting there, and that's what is so exciting.
Today's simple recipe is:
Artichoke & White Bean Dip. (something I will make from time to time to take to a party.)
14 0. can artichoke hearts, drained, reserve the juice
1 lb can white beans, drained and rinsed
2 scallions chopped
1/2 tsp dried thyme leaves
black pepper
salt
assorted veggies to dip
Combine the artichokes, whitebeans, scallions and thyme in a processor. Puree.
Add juice in dribbles as necessary, until the dip is of a medium-thick consistency.
Transfer to a bowl and add a pinch of black pepper and salt.
EASY. Good stuff. (Also, VERY healthy.)

sounds yummy!! I just recently returned to the WW points plan so counting, counting, counting and looking for tasty ways to fill up without using all my points. I bet this is pretty low on the points value but filling. :) thanks for sharing.
LOVE THIS!!! This Is something I would thoroughly enjoy and am going to copy immediately! (my binder is very much like yours!!!)
