40th Birthdays & Blog Hops

What a week my friends! I survived my first official week at work AND I had a jam-packed weekend with friends. It was awesome!!

We can start with how much I LOVE the job. WOO HOO! It took a long time to find it, but now that I am there - not going anywhere for a loooooong time. Awesome!

As for friends, my oh my did we surprise our friend, Leslie, this weekend. She turned 40, and her strict instructions were that she just wanted  a quiet night at home. *snicker*

I will let the pictures tell the story!

The Art of Maintaining a Husband

Most little girls dream of one day finding her Prince Charming, or if you are me, the perfect Mr. Darcy. I was always looking for someone who carried himself well, you know - had an air of sophistication. He would have dark hair and dark eyes,and of course, be well traveled and educated.

Perhaps your picture looks a little different, but that was my little checklist, ever since I was a little girl.

With a show of hands (or in our case, comments) how many of you would say maintaining a happy marriage or in most cases, a happy husband, is probably the hardest job you have ever had? Of course, if you have children, that might be more so the case. But I have yet to find anyone who says relationships are easy. Even those of us who find our soul mates, life and people and differences of opinion are a tough pill to swallow some days.

I have yet to figure it all out. I may NEVER figure it all out. But what I can do is hope for the best, and do a little something...

I found this great little (looks like a bookmark..) and I thought, hey - I can do that.

I wanted to just let you know that I am well, however, I am just crazy busy this week. Since I just started a new job at the "passion" choice, I am jumping in head first and going for the gold!

All is Well, Says my Soul

Things are as they should be, aren't they?

Just a quick catch up - I am totally loving my new job. I am in the middle of "learning" mode. It will take time to grasp everything I need to understand - from history, to the works of art, to the sponsors to the events... but at the end of the day, it will be all worth it.

I went for the passion.

More good news, as I lay down last night, and was almost asleep, the phone rang.
After a bit of confusion and muffled words, I realized what he said,

"I'll get a one way flight to Georgia. We can ship my car."

That's all my heart needed to hear.

I could hardly get back to sleep. One, because I was super excited. Two, because once someone wakes me up, it takes me forever to return to sleep.

Good thing people, good things.

It's about time.

After that game, Autumn went next door to play - and the adults went for Trivia 80s.

Happy Easter, dear friends! What a WONDERFUL day!
 
I am just overflowing with happiness and actual joy. Things are as they should be, and God has blessed me - as well as you!
 
I always feel like religious holidays are a great excuse to share my personal beliefs with you. It's sort of a pass, so to speak, in this world that would so rather cast a blind eye toward faith. I may not shout from the rooftops how I feel about God, for I see it as a more personal matter. However, it is nice when days like today roll around, and sort of reawakens the spirit.
 
Last night I could not sleep. I know why, and it was nothing bad, well.. unless you count the banana pudding I had before sleep. There was just entirely too much sugar coursing through my veins. I was wide awake. The good news is, it offered me an opportunity to open my bible and read about the resurrection. Literally, the story of Easter.
 
I just reveled in the verse from Mark 8:31 - "Blessed are those who have not seen and yet have believed."
 
Then I began to think about the wonderful opportunities that are opening up to me - how my life seems to be back on course.
 
Matthew 6:33 - "But seek ye first the kingdom of God and his righteousness; and all these things shall be added unto you."
 
 
We are preparing for our Easter meal at home. Typically a baked ham, or sometimes lamb is served. We always have mom's mashed potatoes and her fabulous gravy, and some yummy green beans. Plus, I made a fabulous banana pudding last night.

I said my prayers. I read the Bible. I called my egyptian. I thought about my week at work coming up. I began to make a plan (financially) for my future.

I feel as if I have been lifted out of my own tomb.


 
 
I wish each of you a blessed Easter with your family. For those that do not believe, I hope you find some time today to celebrate life.

He is Risen!

After Jesus was crucified, Joseph of Arimathea had Christ's body placed in his own tomb. A large stone covered the entrance and soldiers guarded the sealed tomb. On the third day, a Sunday, several women (Mary Magdalene, Mary the mother of James, Joanna and Salome are all mentioned in the gospel accounts) went to the tomb at dawn to anoint the body of Jesus.


A violent earthquake took place as an angel from heaven rolled back the stone. The guards shook in fear as the angel, dressed in bright white, sat upon the stone. The angel announced to the women that Jesus who was crucified was no longer in the tomb, "He is risen, just as he said." Then he instructed the women to inspect the tomb and see for themselves. Next he told them to go inform the disciples.

With a mixture of fear and joy they ran to obey the angel's command, but suddenly Jesus met them on their way. They fell at his feet and worshiped him. Jesus then said to them, "Do not be afraid. Go tell my brothers to go to Galilee. There they will see me."


When the guards reported what had happened to the chief priests, they bribed the soldiers with a large sum of money, telling them to lie and say that the disciples had stolen the body in the night.

After his resurrection, Jesus appeared to the women near the tomb and later at least twice to the disciples while they were gathered at a house in prayer. He visited two of the disciples on the road to Emmaus and he also appeared at the Sea of Galilee while several of the disciples were fishing.

The Soul of Cooking

How can you ever get tired of a good, home-cooked meal? I know I cannot- the idea of fried chicken, fried okra, mac & cheese, and maybe a little corn bread on the side makes my mouth water.

But wait a minute... you may not think of those dishes as your home cooking. But down here, we do.

Southern cooking or for the gastronomically inclined, cuisine, got it roots from African Americans. If you are looking for good, old fashioned, southern comfort food - that's what you are going to find. The most authentic in flavor, ingredients, and the way you actually cook the food comes from what is known as Soul Food.

The whole idea of labeling this style of cooking came from the 1960s, however, the actual roots of it all can be traced back to Africa, and to a lesser extent, Europe. Apparently rice and okra were the staples in the West African diet and were introduced to North Americans as a result of the trans-Atlantic slave route.
Foods such as corn and cassava from the Americas, turnips from Morocco, and cabbage from Portugal would play an important part in the history of African-American cooking.

Since it was illegal for slaves to learn to read or write, many of the recipes that were developed were passed along orally, and even through stories, until the emancipation. The first soul food cookbook is attributed to Abby Fisher, entitled What Mrs. Fisher Knows About Old Southern Cooking and published in 1881.
From there, hundreds of cookbooks have graced the shelves of every book store and library in America. Southern homes prepare many of the traditional recipes every Sunday. It's tradition. It's a way of life here.

One of the most interesting things I have come to realize in the past year or so, and  even more so aware now, is that much of African American history and culture is a part of every person born and raised in the south's history and culture. All of the way down to the very food we put in our mouths. The food we consider "home cooking," what brings comforting memories is nothing more than the fantastic, flavorful foods and recipes that the African Americans created in America's earliest years.

The whole reason I started thinking about the significance of Soul Food is because an event will be coming up soon that I will be attending and working at, and I wanted to understand the cultural significance of what we are sharing. At the end of the day, it's a piece of history, of culinary art, and an important cornerstone of the southern tradition.

If you are curious as to what exactly IS Soul Food, here is a list of the more popular dishes:
Fried Chicken
Fried Fish
Pork for flavoring of vegetables and legumes, gravys/sauces or as a meat - Ham & Bacon
Smoked Ham Hocks
Pigs feet (slow cooked, sometimes pickled or often eaten with a vinegar based sauce).

Fatback (fatty, cured, salted pork, especially the first layers of the back of the pig primarily used in slow-cooking as a seasoning).
Chitterlings or "chitlins" (the cleaned and prepared intestines of pigs, slow cooked and also often eaten with a vinegar-based sauce or sometimes parboiled, then battered and fried) or hog maws (the muscular lining of the pig's stomach, sliced and often cooked with chitterlings).
Poultry giblet, such as chicken liver and gizzards.
Turkey neck bones
Black Eyed Peas (mixed with rice becomes Hoppin' John)
Various greens, including collard greens, turnip greens, and mustard greens

Okra (vegetable which is native to West Africa, and is eaten fried or stewed and is a traditional ingredient of gumbo. It is sometimes cooked with tomatoes, corn, onions and hot peppers)
Sweet potatoes, often parboiled, sliced, then adorned with butter, sugar, cinnamon, nutmeg, vanilla or other spices, and baked; commonly called "candied sweets" or "candied yams"
Cornbread (a quickbread often baked or made in a skillet, commonly made with buttermilk and seasoned with bacon fat; inspired by the great availability of corn in the Americas and by Native American cultures. Particular variations: hoecake, a type of cornbread which is very thin in texture, and fried in cooking oil in a skillet, whose name is derived from field hands' often cooking it on a shovel or hoe held to an open flame; Hushpuppies, balls of cornmeal deep-fried, usually with salt and diced onions).

-Grits (a cooked coarsely ground cornmeal of Native American origin)

Summer List

 It is only April, but I am already trying to decide what my summer is going to look like.

Since I just started a new job (YIPPEE!) and I know I need to find my own apartment, the options are going to have to be inexpensive and short day trip ideas.

This blog post is going to be a list of staycation ideas as well as day-trip ideas for me (and YOU)!

Let's begin:

Staycation
1. Since we know I have an ever eager 5 year old ready to run along on an adventure with me, most of these ideas will be just an excuse to be a kid again. I think the best #1 idea I could do is invest in outdoor toys. For example - a badminton net, a big beach ball, water guns, water balloons, etc. You can buy these items fairly cheap at most discount stores, so this might be right up our alley. It gets so hot down here, what a better way to cool off and enjoy my niece.

2. Movies - I realize that it is sort of cliche, but it is a lot cheaper than running off to the beach. Not to mention, it is always nice and cool inside. Plus - many of the block busters hit for summer.

3. Summer reading. I think I mentioned it before that I STILL buy stacks of books for summer. Sort of a habit from childhood, but it becomes something I like to do. Grab the lawn chair, grab a nice big glass of iced tea, and just sit by the gardenia bush, inhaling that sweet scent while diving into the next story.

4. Zumba. Yes, now I will be able to afford to start back at the gym. I will select a Zumba class, and go to one a couple of days a week. It's a lot cheaper and a lot less smokier than dancing it up at a club! LOL

5. Ballroom Dancing. I want to get back into this, and what a great idea for summer. I did find two different instructors in Macon, so I think this might be a nice treat and distraction from not being able to take off overseas for the summer. ;-)

6. Shopping Farmer's Markets - I LOVE spring and summer for visiting local farms and farmer's markets. The selection is incredible. Also, since I love to take pictures, the colors of the fruits and veggies are so vibrant.

7. Swimming. Just visiting a friend who has a pool is a wonderful way to chillax.

8. Lake Tobo - there is a lake nearby, in Macon, and there is a marina where you can rent a boat for the day. Would be fun to get a group together and do this.

9. Home spa day - why not break out the foot bath, the back massager, the face mask, and give myself a manicure from time to time?

10. Finally - Visit the local museums. Yes, I will be working at one, and that thrills me to no end, but really get out there and take in the history of my hometown. Also, attend theater productions, etc. If Macon is known for one thing - it's the Arts.

Day Trip Ideas

1. I am SOOO thankful to only be 2 1/2 hours from Savannah. Do I need to say more? I guess I will.. I love taking the Dolphin Cruise, I love ghost tours, I love the moonlight cruise, I love going to the beach, I love the Telfair Museum, I love taking pictures of all of the amazing homes, I love the food.... etc... etc..

2. Atlanta is 1 1/2 hours away. Maybe even an hour. Depends on the traffic. There are SO many things to do there - The Georgia Aquarium is the largest aquarium in the world, The CNN Center, Underground Atlanta, the Atlanta Zoo, Fox Theater, dining, shopping.. I could go on and on. Many MANY choices.

3. Stone Mountain, out side of Atlanta, has a TON of activities in the summer.

4. Jekyll Island, this is about 3 hours, maybe 4 from Macon. My family used to vacation here when we were kid. They have a wonderful outdoor theater, a great summer water park, the island is small, so you can rent bikes. It's awesome.

5. Shoot the Hooch - I love heading to Helen, GA (about 2 1/2 hour north to the mountains,) and renting an inner tube, taking a bus to the top of the mountain, and tubing down the Chattahoochee River. You can do it all day! It's awesome.

6. The Georgia Renaissance Festival takes place from late April to I want to say early June. There is nothing more fun than a Renn Fest.

7. Jacksonville is only 4 hours from here. Tampa, about 5 1/2. St. Augustine- 5 hours. There are options!

8. I can always day trip it back to Birmingham to visit friends.

9. Chattanooga is about 4 hours from here.

10. Finally Charleston. Can you believe I have YET to see Charleston. I think this summer may be the one.

A Reason to Celebrate

Let's just pretend for a minute that I have something to celebrate. (Which I do!) Let's also say, just for a laugh, that I wanted to invite all of my faithful blog readers to a little soiree! (Which I totally would, if it were logistically possible.) This blog post is my virtual thank you.

I want to thank each of you that supported me through my entire unemployment process for the past eight months. Either through your comments, phone calls, emails, or even a few silent prayers now and again.

Our prayers have been answered!

I know that when you decided to follow my journey, you probably never saw what happened to me coming, nor did I. I appreciate those of you who stuck in there with me through some of my more bitter posts- mostly dealing with rejection, financial loss, and/or my mal-adjustment to returning to my parent's home after 20 years. Those days are finally coming to a close - officially!

What I have decided to do for fun, is create a virtual party, and you are invited!

Again, thank you all for hanging in there with me on the ride. So many of us have lost our jobs during this tough economy - and the going length for staying unemployed is 18 months. I was in it for 8 months, and I am so eternally grateful for this new opportunity.

Wash it all away

I am ready for a little spring cleaning! Internal spring cleaning, that is.

I have spent the last eight months waiting to exhale, and I am finally there.

If all references clear - I got the job I REALLY wanted. Isn't that wonderful news?

*exhale*

Not only that, but it is such a wonderful transition from my former life. Basically doing the exact same thing, but this time, in an environment that supports creativity, embraces diversity, and seeks to educate others. Could it not be a better fit?

With that great news, I have decided it is time to wipe those cobwebs of negativity away. There is no room for them anymore. I have a new lease on life - and I know it will sink in soon enough.

There is so much to look forward to in the upcoming months. New challenges, lots of new information to digest, and of course, my favorite one of all - a NEW HOME.

All of these things will come in due time... I just have to be patient.

While spring brings us a rebirth of a new life, and Easter promises eternal life, how can we be truly open to these amazing gifts?

A karma cleanse.

April Fools!

I just want to go on the record, for my sweet, sweet friends that took my Facebook status seriously...


I am not moving to Egypt with the egyptian.

Ha Ha Ha - we had a good laugh at my family's home about the responses on the status update.

It read:

It is official - we are moving to Egypt! After months of planning, we are just going to take a leap of faith and give his country a try! Wish us luck!

;-)

I almost gave a few people a heart attack.

I actually called the egyptian to remind him that it was, indeed, April Fool's Day, and I wanted him to know I was just joking. Granted, I wonder if our Egyptian friends celebrate, and will they get confused?! *giggle*

The truth is - I am still in Middle Georgia and still interviewing with two companies. One in particular I am very interested in. The egyptian is waiting to hear what the verdict is, and then we will move into our own home accordingly. In America. ;-)

Though - it is not entirely out of question, the idea of us moving to Egypt. I LOVED it there.

I am.

This morning started off a little shaky for me. All over some coffee creamer.

Long story.

But I sat here, staring at the computer screen, trying to come up with something to write about.

Typically, I would go into a tirade on personal space versus gratitude- particularly on today's fiasco. But because I am trying to be more conscious of how much I "share" with you, I am holding back.

Again, long story.

As I continued pondering, and just trying to shake off the bad mood blues, I came across this quote: You are a result of your experiences. Why regret who you have become?

I love it.

I think over the past few months, I am more and more aware of who "I" am, than ever before. Try sitting through numerous interviews, being asked a bazillion questions about who you are and why you are the way you are, and about everything you have ever done. Even when going through the unemployment process for unemployment benefits - explaining who you are, where you live, and your life choices. Then there is immigration, where my husband and I have to explain why we choose one another, and in turn, have to prove our love over and over to government officials. Always the same questions. Why and How?

At the end of the day, I am who I am, and I act the way I do - because of my past experiences. The choices I have made are mine alone. The words I use, the tone I intend, the extent of what I share with you here - all make up me.

I often think we try to fit a certain mold for people in our life. If our significant other is looking for a certain type of companion, we try to become those pieces that are not a part of our selves. At work, if we are trying for a promotion, we tend to want to incorporate more of the skill set that "they" may be looking for. All of this may be happening in a way to improve ourselves, then again, are we just trying to fill in the blank for our lack of experience with a certain aspect of life?
